The recipe below popped up in a text from a 16-year-old butter fan in Minneapolis. Don’t miss the ideas he’s been experimenting with below--or the photos of his results.
POPover ingredients:
1 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, room temperature
1 1/4 cup milk, room temperature
1 1/2 Tablespoon Casco Bay Creamery Salted Butter (melted and cooled)
Optional: 1 container Casco Bay Creamery Cream Cheese (12 teaspoons)
Directions:
- Preheat oven to 450 degrees F
- Mix everything in the order above in a large bowl (all in the same bowl)
- Grease a 12-cup metal muffin tin with Casco Bay Creamery Butter
- Evenly divide batter between muffin cups
- Drop a teaspoon of Casco Bay Creamery Cream Cheese into each muffin cup
- Bake at 450 degrees for 15 minutes, then reduce the heat and bake at 350 degrees for 15 minutes or until brown
- Serve with--butter! Try Casco Bay Creamery Maple Butter (or your favorite flavor)
