Wash, and dice about 4 cups of red or Yukon gold potatoes, leaving the skins on. Place in a large pot and add water until potatoes are covered (at least half full). Bring to a boil, then reduce heat slightly to a simmer. Allow to cook for at least 20 minutes, or until fork tender. Drain, then place back in pot. Add about 2/3 cup of room temperature light cream or half and half, 2/3 cup of Casco Bay Creamery Garlic & Herb Butter, and salt and pepper to taste. A hearty side dish for your favorite protein!
